I decided it's time to go to a stomach ultrasound. The doctor give me a pill and send me home, it was so superficial and didn't took my pain and all my symptoms seriously.
After a week I made another appointment, to a different doctor, that was sooo helpful, I just can thank her enough. She sent me to make a whole set of analyzes, including those for gluten intolerance.
My iron was so low and there was also a change at the pancreatic enzymes: they were over the top!
And of course, my gluten intolreance analyzes have come out pozitive, for my despair then, but now I am sure that everything happens for my greater good, even if I coulden see it then.
I had to keep eating gluten for a period of 5-6 days until I had the appoitment for an endoscopy and biopsy. It was hard but I managed to make it.
The experience was not that bad, they did anesthesia and I can't even remember everything, everything is kind of blurry. It all lasted less then 15 minutes, with biopsy and all.
After anesthesia I was so dizzy and so hungry, because you can't eat anything, with at least 8 hours before, and drink nothing with 4-6 hours before, because you can shed the liquid or food.
The only thing I could do after, was to go eat something and after lunch, straight home in my bed, for the rest of the day.
I reccomend to take a day off when you decide to make an endoscopy with anesthesia, it's for the best.
They don't recommend you to drive, and you should have someone with you after the procedure, because you might be very weak, and not able to walk by yourself.
After this last intervention, the hardest part came: giving up gluten completely. It was a hard thing to do, in the first 2-3 weeks it was really tought, after this will become much easier. Everything takes time.
Most of the pastries I buy it from a pharmacy that has bio products, or I order online and even in stores. I try to cook as much I can at home, because nothing compares with a "made in" meal.
I also have times when I go out, but I have to be extremely carreful what I order and where I am going. I usually call before and ask if they have gluten free products or if they can make me a dish without being contaminated. People in Romania don't take celiac disease as serious as other countries.
I stoped eating pastry, pretzels and everthing that obviously contain wheat. I started baking them, also for some friends and people that ask me very nice if I can help them. Gluten free flour it's not easy to use, has some secrets and tips that can help you master it.
After a period of time, I received also the results from my biopsy, that told me how advanced it's the disease. Normally, there are 4 levels in the celiac disease, and after that, comes Cancer.
After the results I also started a regim with Manuka Honey- very well known as the most powerful natural antibiotic, anti-inflammatory, and also kills the bacteria: Helicobacter pylori.
I almost finished a 250 ml jar and I must say I really feel better then before. It also helps whenever I get contaminated with gluten food or I eat something that makes me feel sick, I take a tablespoon of this money and instantly the pain it's gone, it's really amazing.
I try to avoid eating foods that contains sauces or any other spices that normally might contain gluten. I also seen that at restaurants, even the salt and pepper that are in bottles contain gluten, so I try to use at least I can the products in a restaurant.
I started regaining weight and I feel lighter and more pozitive. That might be also because I started meditating every single morning and really helps, I wake up much easier and with more energy.
I believe that also the enviroment you are living and working makes a big big difference, because if I am stressed or I don't feel good, it's more difficult to be kind with the people around you, when you suffer, you exteriorize yourself and hurt people whitout intent.
The energy around you affects you and you can deny that. I would prefer to be that kind of person that doesn't care about what people say or do, not even what they think, because in the end it's not important at all. You live as you please, and nobody should have a saying in that.
But the "problem" it's that I care, that's one of the reason I decided to write this little story, maybe by sharing I can help somebody, even if that means that he or she will know, that it's not alone.

When I bake for strangers, he final product it's not cheap, because I only use bio/gluten free, healthy products, that are also very expensive. And what people, in general, don't understand, is that you don't pay only the product, you pay also for the experience, the time spend in the kitchen, trying to find a way to make the product better, you pay for all the premium classes you did and all the time you took to learn all that is necessary.
When I dont' t bake, I go shopping, and I found good cookies, biscuits, pasta and lots of mixes, in the stores. The best bread for me it's from "Gerble". Dark one, sooo moist and easy, fluffy and not so dense like other breads. It's better then the white bread. I also use a lot the flour from Nutrifree, for me it's the best- the one just for bread- the products taste amazing and it's easy to use. I tried also the bread from them and it's so tasty and fluffy, and it doesn't fall apart when you break it, like many of them are.
From Nutrifree I tried also the rolls for burgers and the hot dog bread and they are really good.
I try to eat less bread, but romanian people are in love with pastry products and bread, so it's kinda hard.
